1. Stir-fried Water Spinach with Shrimp Paste

Ingredients:


1 large bunch of water spinach, trimmed and washed


2 cloves of garlic, thinly sliced


3 cloves of shallots, thinly sliced


5-7 bird's eye chilies (to taste), sliced diagonally


1/2 teaspoon shrimp paste, lightly toasted


1 tablespoon oyster sauce (optional)


Salt and sugar to taste


Cooking oil to taste


A little water


Method:


Heat a little oil in a pan. Sauté the garlic and shallots until fragrant.


Add the bird's eye chilies and the ground shrimp paste. Stir well until the shrimp paste dissolves.


Add the water spinach and stir quickly until slightly wilted.


Add oyster sauce, salt, and sugar. Add a little water to allow the spices to penetrate.


Cook until the water spinach is cooked through but still crispy. Adjust the seasoning. Serve immediately.


2. Padang Omelette

Not your average omelette, this Padang omelette is thick, savory, and rich in spices!


Ingredients:


3-4 duck/chicken eggs


2 tablespoons rice flour


1 stalk spring onion, thinly sliced


2 kaffir lime leaves, thinly sliced (remove the stems)


1 stalk lemongrass, bruised


Salt and pepper to taste


Cooking oil to taste


Ground Seasonings:


3 shallots


2 cloves garlic


3 curly red chilies


2 bird's eye chilies (optional)


1/2 teaspoon ground turmeric (optional, for coloring)


Cooking Instructions:


Grind all the spices.


In a bowl, beat the eggs, add the rice flour, ground spices, spring onions, kaffir lime leaves, lemongrass, salt, and pepper. Mix well.


Heat a generous amount of oil in a flat-bottomed skillet (a Teflon pan is best). Use medium-low heat.


Pour in the egg mixture and spread evenly to form a thick crust. Cook until the bottom is cooked through and golden brown.


Carefully flip the omelet. Cook until both sides are cooked through.


Remove, drain, and cut into pieces. Serve warm.


3. Clear Vegetable Soup with Spinach and Corn

A refreshing and healthy clear soup, perfect for any weather.


Ingredients:


1 bunch of spinach, trimmed and washed


1 sweetcorn, kernels removed or cut into rounds


1 carrot, thinly sliced (optional)


3 shallots, thinly sliced


2 bay leaves


1 lime segment (optional, for a distinctive aroma)


Salt and sugar to taste


Sufficient water


Method:


Bring water to a boil in a saucepan.


Add the shallots, bay leaves, and lime (if using). Cook until fragrant.


Add the corn and carrots (if using). Cook until the corn is tender.


Add the spinach, salt, and sugar. Stir briefly.


Cook until the spinach is wilted. Adjust the seasoning. Remove from heat and serve. Do not overcook the spinach to avoid losing its nutrients.


4. Wet Stir-fried Tempeh

This wet stir-fried tempeh is perfect as a side dish with warm rice, with its sweet, spicy, and savory flavors.


Ingredients:


1 block of tempeh, cut into matchsticks, fry until half-cooked


3 shallots, thinly sliced


2 cloves of garlic, thinly sliced


2-3 large red chilies, sliced diagonally


2 large green chilies, sliced diagonally


2 bay leaves


1 segment of galangal, bruised


2 tablespoons sweet soy sauce


1 teaspoon oyster sauce (optional)


Salt and sugar to taste


A little water


Cooking oil to taste


Method:


Heat a little oil. Sauté the shallots and garlic until fragrant.


Add the red chilies, green chilies, bay leaves, and galangal. Sauté until the chilies are wilted.


Add the fried tempeh. Stir well.


Add the sweet soy sauce, oyster sauce, salt, and sugar. Stir well.


Add a little water and cook until the flavors are absorbed and the liquid is reduced. Adjust the seasoning.


Remove from the heat and serve.
